This indulgent, creamy double brie showcases the milk from our jersey cows which graze on nutrient-rich Biodynamic pastures in Western Victoria. It’s a "double" brie, meaning it’s extra creamy and decadent with a silky, velvet-like rind. Let it sit out at room temperature for an hour before eating so the center gets perfectly gooey—it’s incredible with fresh fruit or a drizzle of honey. About the Producer: Symons Organic Dairy The Symons family has been the "milkies" of Bendigo, Victoria in Australia since 1919. While the rest of the dairy industry moved toward massive industrial lots, soy-based feeds, and heavy processing, third-generation owner Bruce Symons decided to go back to the way his grandfather did things. This is "old-school" organic dairy from pasture-fed cows, made with traditional / non-industrial methods in small batches by a passionate producer making the most of southern Australia’s pristine dairy country.
